Indoor Picnic Luncheon

This past Thursday the J. Scott team was able to convert the quaint lobby of a Philadelphia area university into a vibrant, indoor picnic setting. Guests were greeted by a warm and wholesome atmosphere, reminiscent of a classic family luncheon. Eyes were immediately drawn to the towering fresh cut floral arrangement, which added a touch of color and life to the room. This was complimented well by the surrounding rustic décor which brought about character and created an earthy, natural feel.

The satin blue linens could barely be seen underneath the rolling spread of food platters. The sandwich tray is a staple of lunch parties everywhere, but as to be expected, J. Scott was able to put a creative spin on a classic meal. Cold cuts were replaced by an array of gourmet sandwiches, including roast beef with brie, Woldorf chicken salad prepared with grapes and candied walnuts, and crab cake burgers on Brioche rolls. To round off the meal our chefs put together two garden rich salads to play off of the running “nature’s bounty” theme. The first was a tortellini salad mixed with sugars snap peas, yellow pepper, and red onion. This was followed by a light baby spinach summer salad topped with mandarin oranges, fried shallots, sliced Gorgonzola, and candied pecans.

No lunch is complete without something sweet. For desert guests enjoyed an assortment of homemade cookies, brownies, and lemon bars.

With a touch of care and attention to detail, the J. Scott team was again able to create a warm and welcoming environment, leaving another satisfied customer.

Reindeer & Recipes

I couldn’t wait to share these pictures from a private event we catered this past weekend.  Using pine roping, reindeer, candles and those glorious big red drums we turned this residence into a castle fit for Santa himself.

  

The client chose a pasta action station along with several other selections.  Pasta was tossed with toppings including grilled chicken, grilled asparagus, sauteed mushrooms, cannellini beans, roasted peppers and many many more.  For dessert they enjoyed a cheesecake bar.  This included slices of creamy New York style cheesecake and a variety of toppings for the guests to choose from.  The site of it all put me in such a holiday spirit that I had to share this delicious cookie recipe; one of my favorites during the holidays.  Enjoy!!

Jam Thumbprint Cookies

Ingredients

  • 3/4 cup butter, softened
  • 1/2 cup white sugar
  • 2 egg yolks
  • 1 3/4 cups all-purpose flour
  • 1/2 cup fruit preserves, any flavor

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. In a medium bowl, cream together the butter, white sugar and egg yolks. Mix in flour a little bit at a time until a soft dough forms. Roll dough into 1 inch balls. If dough is too soft, refrigerate for 15 to 20 minutes. Place balls 2 inches apart onto ungreased cookie sheets. Use your finger or an instrument of similar size to make a well in the center of each cookie. Fill the hole with 1/2 teaspoon of preserves.
  3. Bake for 8 to 10 minutes in the preheated oven, until golden brown on the bottom. Remove from cookie sheets to cool on wire racks.

Merry Masses

How does a large company sprawled up and down the east coast celebrate the holiday season?  They hold an open house in their corporate headquarters and invite 1200 of their employees.  Last week J. Scott Catering took on one of it biggest events since it began 16 years ago. 

  

Using stations, they were able to give their guests a wide array of options to suit every taste.  From live action pasta stations to hand rolled sushi, no employee was left feeling hungry at the end of this all day event.

  

The hard part about accomodating that many guests is providing enough staff to ensure that everyone is well taken care of.  With two shifts and a total of over 50 staff we were able to pull off a flawlessly memorable event.

  

Decor included everything from white  trees with blue and silver ornaments and stars to poinsettias, red and green linen and holiday dressed bears.  We used fun props to hold foods like a drum to hold bread.  And there were dozens of large wrapped presents strewn about the office.  It seemed as though everyone left with a new sense of holiday spirit to carry them through the rest of the year.

Passport to Hospitality

This week we have worked with some great clients to create amazing events.  One hotel client in particular chose a global theme to celebrate the grand opening of a new branch.  Guests  moved around to each international themed food station and had their “passport” punched.  It was a great way to mix fun and functionality as guests were able to experience both good food and the different amenities the new hotel has to offer.

   

Here we have our Asian wok station – nine different toppings, four woks and two chefs.  Complete with small Chinese food take-out containers,chopsticks and of course a fortune cookie, it was certainly a crowd pleaser.

And no event would be complete without a delicious dessert.  For this event the client chose a selection of miniature desserts and this stunning chocolate fountain.  With dipping options including oreo cookies, marshmallows, pretzels and more, guests didn’t have to search long to satisfy their sweet tooth.

It was another great event with a truly creative and fun client.
